  • Rice, not wheat: Vietnam was shaped by rice cultivation. Rice is the basis of all dishes – rice noodles, rice paper, rice flour. Wheat simply plays no cultural role

  • Fish sauce instead of soy sauce: The number one seasoning in Vietnam is fish sauce (Nước Mắm), not soy sauce. Fish sauce is made purely from fermented fish and salt – naturally gluten-free
  • Fresh herbs instead of sauces: Vietnamese cuisine relies on fresh herbs, lime, chilli, and fish sauce for flavour – not complex sauces that often contain wheat

These structural characteristics of Vietnamese cuisine make it considerably safer than other Asian cuisines, which often rely heavily on wheat noodles, soy sauce, and gluten-containing condiments.

If there's one dish you can order in a restaurant with confidence when you have celiac disease, it's phở. But let's look at why that's actually the case:

Rice Noodles: The Safe Alternative to Wheat Dough

The foundation of every good phở is the noodles. At Phở & Rice, we use 100% rice noodles. Rice noodles are made from rice flour and water – nothing else. No wheat, no processing in a wheat context.

This is important to understand: rice noodles and wheat pasta are fundamentally different. Wheat pasta (like spaghetti) is made from ground wheat, water, often egg, and sometimes salt. Rice noodles consist of ground rice grains and water – that's it.

Important: Some cheap imported rice noodles are manufactured in facilities that also process wheat. At Phở & Rice, we source our rice noodles from trusted suppliers who specialise in gluten-free processing.

The Naturally Gluten-Free Broth

A genuine Vietnamese phở broth is cooked for many hours from: beef or chicken bones, onions, ginger, star anise, cinnamon, cardamom, cloves, coriander, and salt. That's it.

Nothing on this list contains gluten. No soy sauce, no bouillon cubes (which often contain wheat), no thickened sauces, no secret ingredients. This is pure, clear broth, as it's been cooked in Vietnam for centuries.

At Phở & Rice, we simmer our broths for 12-16 hours and use exclusively natural ingredients without additives or gluten-containing seasoning agents. Each pot is thoroughly cleaned before we start preparing phở.

Your phở is served with:

  • Rice noodles – gluten-free
  • Clear broth – gluten-free
  • Beef or chicken – gluten-free
  • Fresh herbs (Thai basil, coriander, mint) – gluten-free

All Phở Varieties (Gluten-Free)

Phở Chay – Our vegan phở without meat, instead with vegetables and tofu, cooked in vegetable broth. Gluten-free and safe for vegans too.

Cơm Dishes (Rice Dishes) – Gluten-Free

All our cơm dishes consist of fragrant long-grain rice (also gluten-free), served with:

  • Grilled or fried meat
  • Fresh vegetables
  • Fried shallots
  • Cucumber and tomato
  • Fish sauce to drizzle over

These dishes are completely gluten-free, provided you avoid soy sauce (more on that below).

Summer Rolls (Rice Paper Rolls) – Gluten-Free

Summer rolls – these fresh, cold-served rolls with rice paper, rice noodles, shrimp, herbs, and vegetables – are a classic and absolutely gluten-free. Rice paper consists of rice flour and water; the filling is purely plant-based and protein-rich.

The usual dipping sauce is peanut sauce (based on peanut paste, coconut milk, and lime) – naturally gluten-free.

What is NOT Gluten-Free: Bánh Mì

Here we must be honest: the popular Vietnamese sandwich Bánh Mì is NOT gluten-free. Bánh Mì bread is a French-Vietnamese hybrid bread made from wheat. It was introduced during the French colonial period and has become firmly established in Vietnamese cuisine – but it definitely contains gluten.

If you have celiac disease, you must avoid Bánh Mì, no matter how delicious it looks.

Other Safe Appetizers and Dishes

Spring rolls (if not fried): Some restaurants serve spring rolls with rice paper instead of wheat dough – these are gluten-free. Important: always ask if spring rolls are made with rice paper.

Grilled or fried meat and fish: All simple grilled or fried protein sources are gluten-free – as long as no gluten-containing marinades or sauces are used.

Salads (e.g., papaya salad): Fresh Vietnamese salads are usually gluten-free, as long as the dressing consists of fish sauce, lime, chilli, and sugar – which it normally does.

Understanding Critical Ingredients: What Could Contain Gluten?

Rice Noodles vs. Wheat Pasta

The fundamental difference:

  • Rice noodles: Rice flour + water = gluten-free
  • Wheat pasta (spaghetti, udon, etc.): Wheat flour + water (+ egg) = contains gluten

In Vietnam, rice noodles are primarily used. Udon noodles (wheat pasta from Japan) are practically never found in Vietnam – except perhaps in very modern fusion restaurants.

Fish Sauce – Naturally Gluten-Free

Fish sauce (Nước Mắm) is a fermented product made from only two ingredients:

  • Small fish
  • Salt

That's it. No grains, no complex additives. Fish sauce is, by definition, gluten-free. At Phở & Rice, we use only pure fish sauce without additives.

Soy Sauce – CAUTION: Usually Contains Wheat!

Here you must be very careful. Standard soy sauce (the most commonly used type) is made from soybeans AND wheat. The wheat content is often 40-60% – that's not a trace, that's a significant amount of gluten.

There are gluten-free soy sauces on the market (made from 100% soybeans, without wheat), but these are rare and expensive.

The good news at Phở & Rice: We primarily use fish sauce instead of soy sauce. Our phở and other dishes are seasoned with fish sauce, not soy sauce. This makes us considerably safer for celiac patients than many other Vietnamese restaurants.

If you still want soy sauce with your meal: please tell us you need to eat gluten-free, and we'll provide gluten-free soy sauce.

Hoisin Sauce and Other Sauces

Hoisin sauce is made from soybeans, wheat, water, sugar, and spices. It is NOT gluten-free.

Other Vietnamese sauces may also contain gluten. At Phở & Rice, we won't serve these sauces to you without asking, but please ask if you want anything extra.

Cross-Contamination Prevention at Phở & Rice

The best gluten-free menu is useless if cross-contamination happens in the kitchen. That's why we take this very seriously:

  • Separate preparation: When we know a dish needs to be gluten-free, it's prepared with thoroughly cleaned utensils
  • Clean work surfaces: All work surfaces are thoroughly cleaned before preparing gluten-free dishes
  • Separate sauces: We don't use sauces that could contain gluten for gluten-free dishes
  • Team communication: When you tell us you need to eat gluten-free, this is communicated throughout the team and verified

Please note: While we do our best, no restaurant can absolutely guarantee 100% cross-contamination prevention – that's simply not possible. But we minimise the risk as much as possible.

2. Order directly from our gluten-free menu

Phở, cơm dishes, summer rolls – these are safe options.

3. Avoid these dishes

Bánh Mì (definitely contains gluten), and ask about anything else you're unsure about.

4. Sauces and extras separately

Ask for sauces to be served separately if you're unsure. This way you can control what goes into your dish.

5. When in doubt: Ask
